yes, onions are edible when starting their blooming but i don't think there's much bulb there and the flower stalk may go around or through the bulb making it oddly shaped for cutting/cooking. the stalk and flowers are even edible if they're not tough or dried out. the only thing i've heard...

yes, about that, some years we get an earlier frost which will interrupt their last crop, but we will still harvest and use whatever is left.

i remove buds when i'm planting them out or if i notice them earlier when they are still being moved around before transplanting. after that i tend to leave them alone. sometimes we get three crops.
