Here in New Jersey, after I've pulled up the spent tomatoes, zucchini, cucumbers and eggplants I replaced it with garlic in some beds and a cover crop in others. This years' cover is Winter Rye.
Garlic is best planted when hot weather is over. Here in New Jersey the best time to plant garlic is mid-October to mid-November. The bulbs planted too early will bolt and suffer in the winter. The roots will do great with cold weather. But always plant garlic in the autumn and not the spring.
