Thanks guys. I decided to get rid of them since they are huge and from all reports will get bigger. I don't need my garden taken over by them. I didn't realize how many there were until I started pulling them out! :ep I piled them up outside the chicken run so the girls don't get them.

I didn't put down any barriers because it used to be part of the garden. We just scooped the dirt out and put in the boards then put the soil into the boxes and then spread sand around them.
No they were rough cut slabs from the sawmill nearby. They still have bark, etc on the outside and were very cheap. My DH and DS chose the best and straightest ones and sawed them to make the boxes 4'x4' with the individual squares being 2'x2'.

I just cut the mint back and dry the leaves. I use my dehydrator. I did this three times last year so had enough to give away when people tried it and liked it. The mint just regrows again and again.
This is my herb gardens third season. I love the different scents, shapes and colours all in one place. It always makes me smile.

Lucky you! We had alot of peaches last year but this year it was cold at the wrong time and only two trees that were more sheltered have any at all.
