Gonna pull the rest of the cabbages tomorrow, before the slugs eat any more. Also going to pull any leftover beets and hopefully get the summer garden planted.
Anybody entering? I just got my handbook for my area, and even though it's in September, I'm already planning on what to enter. If the garden puts out that is!
Put up some sauerkraut, and tomorrow I'll be making gumpkies (stuffed cabbage) . I'll post a picture when it's done. Couple of days ago I made pickled beets.
This batch is much better! Still somewhat crunchy, and has a real good flavor! I didn't put the carraway seed in this batch.
The jar with the white cap is for eating now. The others I processed for later use.
The recipe I used called for boiling the beets, then saving the water, and using equal amounts beet water and vinager. Then adding a Tbsp sugar for each cup liquid, a tsp salt, and cinnamon, and 1/4 tsp cloves.
Today I tried my hand at pickling beets. There weren't a lot, but enough to try it. They're in the fridge now. I'll taste test them Friday and let everyone know how they turned out.
So, I put up some pickled eggs, and got sauerkraut working, the starter for sourdough is also working. It'll be ready to use tomorrow. Going to make French bread and plain white bread today. Still have lot's of cabbage to pick, as well as green tomatoes growing like wild! Something has eaten...
Here it is! My first attempt at homemade pickled eggs! They've only been in the fridge 12 hours, so it'll be another 4 1/2 days before they're ready to try. The green things are peppers from the garden. I thought it might add an extra "kick ".
The new batch is in the crock in the pantry now. I added some salt water to this batch. Maybe too much? The brine is about an inch above the plate and weight. Hoping this batch will be better!
I waited about two weeks. Clearly not enough time, but the juice seemed to be .....evaporating? And there was mold starting to grow too. The recipe I tried said 7 days? I'll do it again, but I'll have to add salt water to it I think, to be sure the cabbage stays under. I'll stick it in the...
It seemed to lose quite a bit of liquid in the crock. I'll add salt water next time. The taste is not as sour as the store bought type. And it's crunchier. I don't mind the crunchy part, but shouldn't it have a more sour taste?
