beans beans and beans..... how to pick an heirloom bean?

I got my first seed savers catalog today. I was really amazed at how many beans there are.So what kind of beans so you grow. I am think of the drying beans.... I am Hispanic and usually eat pervuian beans or pinto on a last resort.

I just got some free beans in the mail for my spring garden, so I'm about to learn come spring

They sent me Blue Lake Heirloom Pole Beans. I'm not sure what they are or even how to cook them or grow them... but they are large dry white beans if that sounds interesting to you?

Anyways... the directions say "Pick Beans before their seeds swell, pick often to keep from cropping. Stake plants"

I won't be planting them this year. I'm waiting until spring. But I will post about it here.

I suppose it depends on what type of local wildlife you've got. I used to grow various kinds of bush beans (soup, greenbeans, etc.) but since the rabbits started breeding under my mulberry tree I think we are going to go with pole beans. This year I got a good crop of scarlet runner beans, so I'll do them next year too.
