beef stew for a cold evening

nothing like a nice bowl or two of stew on a blistery day....
oh just so you all know this is a............ 100% all natural vegan free beef stew...........

personally like to get everything cut up before hand.

after trimming up the chuck roast take all the trimmings cut them up a bit and cook them. toss the trimmings.... save the fat.......

browned the meat with kosher salt and black pepper in batches.smoke detectors only went off twice:lol:

for some reason a couple photos did not take<thanks apple>
poured the rendered fat into pot added the onions,leeks and garlic cooked for 4 minutes.
added flour cooked that to a consistent of a gumbo brick roux. deglazed the pot with red wine.
added everything else except the veggies now on a low simmer for 2 hours ..

after that every 15 mins will add the potatoes first then carrots then celery simmer for 30 mins then rest for 20 mins ..then serve with homemade frozen rolls from the store.......

Oh yeah, I'll be craving that until I can make some! :drool Spent all day helping my mom move in 10 degree weather. That would thaw me out right quick. Sounds much better than pizza at the moment!
