best pumpkins for seeds?

We love roasted pumpkin seeds... and I was looking at various squash and pumpkins to plant this year and I got to thinking which one would have the highest seed yield? Does anyone know? I would love to grow a few vines of basic pumpkin to can and such for pies soup and breads... but we always devour the seeds with in a day or two of canning the pumpkins.. so I would like to grow a few vines of a squash that has a high seed yield as well so we would have pumpkin seeds for more than just one day a year... :lol:

Baker Creek has a new variety of squash Pipian From Tuxpan (c. mixta)..that is grown for it's large tasty seeds. The round squash grows around 6# and are very seedy, with loads of big white-skinned seeds, tender and nutty..Great raw or roasted (their description in catalog)..20-35 seeds per pk for $3.00

I get a lot of seeds out of my Waltham butternut squash too. Any kind of winter squash/pumpkin seed I have to save them to eat. That's the best part! :D

Hi....I've tasted roasted pumpkin seeds and I grow pumpkins...but I've never roasted my own.....How's it done? Do I clean them and bake them....any ingredients? What temp. to roast and for how long?

I simmer mine in salt water for about 20 minutes or so to make them more tender. You don't necessarily have to simmer them though. I drain them, dump them out on a cookie sheet with a couple pats of butter, sprinkle any other seasonings you might want and bake at 350 until you start to hear them popping around on the pan. Stir a couple times while baking to make sure the butter and stuff gets evenly distributed.
