We have been enjoying the bok choy from the tunnel for about 10 days :). And, I've carried off enuf plants to cover over 200 square feet of open garden. They are little things and just sitting out there in the cold and rain right now going, "Whaaa!"

The bok choy will be okay out in the garden but they've been very happy in the tunnel. This isn't all bok choy but there are 3 varieties, including a red. There is also Fun Jen on the near, left side and that multi-colored stuff in the back on the right is a lettuce mix. (Also, there are 4 flats of tomatoes that have overflowed from the greenhouse, set across the path ;).)

The sun briefly broke thru the rain clouds today so I took a picture.

Oh hooray! Soon all will be free and mother nature will have backed off from ya.

So what have you been making with your bok choy? I have some Pak Bok Choy in the garden, only about 5 heads are doing well, they rest fizzled out. I'm trying to decide on some recipes. :D

The last of the carrots were moved out from under their pile of pine needles and into the produce bin in the fridge about a week ago. The overwintered onions were grabbed ahead of the tractor guy, as they were green and growing (leaving the little guys alone for the moment, in the little veggie garden). Also, there are bags of frozen green beans in the freezer.

Then, let's see . . . ginger and shiitake mushrooms (or, others) from the store and the bottles of rice vinegar and soy sauce. There are a variety of noodles if we want those and bacon to beef to chicken. Freshly squeezed lime juice if the vinegar isn't the choice . . . all the dried hot pepper you'd ever want to shake on anything . . .

A splash of oil heating in the pan, Vfem :). The bok choy has now reached the chop, chop, chop stage but there are still thinnings out there. Gosh! it is about time to sprinkle some seed out in the garden. The spinach is growing nicely but one wouldn't want to put too much reliance on one crop ;)!

I should also say that there are Chinese cabbage in the mix under the plastic and I've got to rummage thru the seed boxes and find the Senposai seed. Both of those will be along much later. The Chinese cabbage will stay right where it is, under plastic until it is pulled off about the 1st of July. The Senposai can take up its place in the open garden and stay there thru a very, very long season, for an Asian green.

I had the ground ready for beet seed before all this rain showed up this week but the seed was 20 miles away . . :/. I'll take it back this afternoon and baby beets will be on their way! Should stop by the garden center and find a packet of Perpetual Spinach seed. I wouldn't want to be left green-less, anytime soon.

I grew some dwarf pak choy this year and was disappointed. First I forgot they were dwarf. and so I waited and waited for them to get bigger but they didn't and then they bolted. My bad. next year I will attempt to remember the dwarf park. I did eat some and they were really tasty! and so easy to grow

So be it... there will be chinese stir fry tonight with bok choy as I have a few ready and waiting on me!!! :D

Things are getting a little out-of-hand but we've been harvesting the greens right along. And, transplants have filled a couple hundred square feet in the open garden. They are still sitting out there going, "Whaaa!" And, that's about it.

Near sundown and looking from the opposite direction in the tunnel. This time, flats of peppers cover the center path:

A real common way to enjoy for lunch, with a bite or 2 of salmon, rice and a cup of herb tea.

I'm right at the end of my pak choy. They are all bolting and sending up flower shoots but that's the best eating of all. I had some shoots a couple of days ago Chinese style with mushrooms and oyster sauce and tonight I steamed them lightly and had them with sour cream.

There you go!!

I like the flowering stalks better than the leaves also, Hoodat.

The only problem is if they flower while the plants are still tiny and the stalk is the size of a pencil. If they are as large as your thumb . . . chop 'em up . . . they are just great!

Mine are sending out flowers too...but since I am too cheap to buy more seed I am letting them go :D

I have a couple of bags in the freezer, and we ate a few heads. I will try a second planting in a cooler, more shaded area and see how that goes. Then I will plant more in August after things cool down.
