I caught a flock of those darned white butterflies laying eggs on my baby salad greens yesterday. So now that they are covered in eggs, what can I do to prevent the eggs from hatching?

I would just smash them. You can wipe them off with a damp cloth or just mush them with your fingers. I actually pulled a leaf off my mustard green and put 2 of them in a butterfly habitat for my children.

Agreed, wiping them off is easy they aren't attached very well like squash bug eggs are. They're very loose!
