Does anyone on here can potatoes, I figure you can buy canned potatoes in the grocery stores so you should be able to can them also, does anyone have a recipe?
It sounds quick and easy, based on these instructions I came across the other day. This lady has a lot of neat advice on canning and stocking your pantry.
Our canned potatoes were our absolute favorite last year. Dh turns his nose up at grocery store potatoes- these he loved!!! We used both fingerlings and red potatoes- and both were delicious. We used the recipe in the ball book (I'll check later, which one). You have to use a pressure canner- but other than that, easy and super convenient to have on hand in the pantry....
Wow, thanks for your responses, I didn't think of looking in the ball book for a recipe... It's so simple, my potato bed hopefully will yield many jars. thank again!!
Not a recipe but you might consider making a chowder with the potatoes, or maybe a leek and potato soup, and canning those. I do the corn chowder myself. The recipe I use, you add the milk and cheese after you open the jar. I tried it last year when I did not have enough corn for a good canning, but that corn and a few potatoes made some real nice soup.
It is often real convenient to be able to open a jar of soup, make some sandwiches, and have a quick and easy meal. Pretty good in the winter.
