They say consuming Jerusalem artichokes on a regular basis can help them maintain healthy blood sugar levels. there are a lot of "Anti Diabetes" fruits and veggies out there... Better try them all!! :D
There are some nasty side affects as well. Finding “starch” replacements is not as easy as it sounds.

I only raise feeder pigs. 6-8 months and they are gone to that fabulous pig resort, Freezer Camp!
That is the exact age I hate them. When <2 months old, cute. Year and over, trained. In between, 200# of pure orneryness and bored looking for something to destroy or at least tear apart.....

@seedcorn, if you are looking for a low carb alternative for potatoes, I sometimes use cooked and riced or mashed cauliflower. It works well as pasta or rice, too. Yummy as pasta for spaghetti sauce.
And you have probably tried spaghetti squash. I need to grow some this year.
Oh, and I have found a soft tortilla shell that claims to only have 4 net carbs. Mission brand Carb Balance. They are kind of expensive, though. I use them cut and toasted for tortilla chips for salsa and cheese dips. They can be used as bread for several kinds of sandwich. They make a nice roll-up.

All corn products are on the side of good carbs because of fiber. Tried 2X spaghetti squash-border one hate. I’ll try cauliflower although like it with cheese sauce so maybe hope.

When I was hoping to be of some help to DD and she thought she should go gluten free, I learned that pizza crust can be made with cauliflower. Amazing! Probably, I'd like a slice, if'n it doesn't fall apart on me.

My spaghetti squash experiment is a little disheartening. I don't know if the other squash in the basement will be usable since January deterioration seems rapid. As a pasta substitute, I am also not sure that I can rate it any higher than "okay." The pie is just "okay."

Pie won't work for Seed' because of the sugar and crust. But then, maybe cauliflower would work for a pie crust. Eh 🤔 ??

i love it both raw and cooked with no seasoning so to me it only gets better from there as you have all those other things you can do with it. :) enjoy!
