I use thyme the most and grow it. (You did say herb, singular.) ;)

I was nearly entangled in all the choices :). I like them! (Altho, I still only know tarragon as something to flavor vinegar, I like it that way.)

I'd have said thyme also, pre-DW. It isn't that she dislikes thyme and sage but she isn't, at all, inclined to use them.

Basil. That's my answer. We are having salmon today and it is a little disappointing to not have lemon basil big enuf to put on it. Rosemary is on it and I'm not about to complain about that :)!

Basil. Thai basil for pho soup. I'm not sure about a substitute. It would be something else.

Basil. Large-leaf. Anything with tomato sauce in it.

DW likes pesto. It isn't that I dislike it - wonderful flavor! But, does anyone eat the Thai basil in pho? It wouldn't be me! I want to taste it but I pull the basil out of the tomato sauce, etc.

I seem to use a lot of parsley and oregano. I also use thyme and basil. This year I have Red Robin, lemon, holy, cinnamon, sweet, and Genovese. That lemon basil smells so good. This is my first year growing it and the holy basil I like the smell of. I am not sure about eating it, but will see. I dehydrate a lot and use fresh as long as I can. I have mint, but do not use much of it. I have sorrel and chives I use some. Also, cilantro, but use more dehydrated than fresh, and dill. I did use some in pickles I made and I make dilly bread. I also have sage, lavender and Rosemary, but hardly use them.

My two big ones are basil and oregano. I'll use maybe two to three quarts of each that I dehydrate throughout the year plus however much fresh I use. I grow the big leaf Italian basil.

Parsley, sage, and thyme are next on the list, with dill and cilantro used some but not a lot.

Garlic. I am growing spearmint and rosemary. I really want a herb garden, but there are too many other things in front of it.

I grow and use lemongrass, rosemary, thyme(german, english, lemon, french and orange spice or something like that), basil(sweet, opal, cinnamon, lemon and this year lime) sage, mint(I don't use these often), chives, garlic and shallots.
