I usually just steam all the corn for about 20 minutes, cut it off the husk, and baggie it all up. Just take out a bag when needed. Sadily my corn is all immature and I might not get anything out of my 400+ stalks. :barnie

we do the same, almost. we cut it off then blanch it. let it cool and put in freezer bags.

Blanch it, on the cob, in boiling water for 3 min. only. It only takes this long to convert the starch to sugar and boiling longer robs the flavor, and can make it rubbery and tough. Cut it off the cob and freeze.

My grandma used to boil the heck and all out of corn, all the while adding sugar to the water! My mom could never convince her that all that wasn't necessary! :lol:

Exactly the same as beekissed :) Just want to clarify the importance of immediately cooling the corn down after taking it off heat. We plunge ours in hose-cold water until the cobs are completely cool, then cut it off and freeze it.
