Actually - for me - fresh or old makes no difference. I start them in tap water, bring to a boil, let it roll for 15-20 mins, then cool as quickly as possible and peel as soon as they are cool enough to not burn my fingers. The eggs literally squirt out of the shells.
I think it probably has A LOT to do with the chicken's diet and the membrane between the shell and the 'white'.
