with the lows dipping into the teens and making a big pot of beef stew, needed a couple carrots and a small parsnip i new right where to go. put on the shoes and coat and pulled the remaining veggies.

went to pull a carrot yeah right the soil was frozen rock hard, found the trowel and chipped away it was frozen 4" down finally got up all the carrots and started after the parsnips first 2 were easy the last one there was a little more effort involved the beds are 11.5" high the monster was 19" long..

planted parsnip twice first time only 1 came up and the second time only 2.....

Very nice Major! That's a humdinger of a parsnip, I've never grown them, but am always tempted.
Did the frozen soil affect the texture of the veggies at all?

while pulling them up did notice that the top 3" had frost on them. tasted the tips and tops of the carrots...a nice crunch,tender and sweet
for the parsnip i think the top was sweeter than the tip.. so yes i do think the cold temps really help bring out the sweetness in both.
definitely going to plant more main season carrots late in the season this year...
