One of my greenhouse gardening books stated that it was common practice among commercial greenhouses to limit the number of tomatoes on each truss to five. It is supposed to produce larger more uniform sized fruit. I hesitated to try it, but I have, and now I am a believer.

Works pretty well, doesn't it?

If you're growing in the low-light season (winter) you'll probably want to limit them to three to a cluster and then up the number to five when you start getting more light.

Several companies make a "J-hook" to support the cluster and keep the weight of the cluster from either causing the stem to break or occluding the flow of nutrients through the stem.
