Galangal report

This galangal was planted just about two years ago from one tiny sprig. As you can see it has made it to about 19 inches high according to that yardstick. I think I can start taking pieces from the root now for tom yum soup and other Southeast Asian recipes. It hasn't flowered yet but I'm hoping it may this Summer. Now If I can find some turmeric root I'll have all of them. My ginger is already harvestable size.

You'll have to let us know about the Galangal.. I've made Tom Ka Gai soup (thai soup made with coconut milk, chicken, lemon grass, galangal & ginger among others) and it's my favorite but I can't get Galangal around here.. How do you harvest it -- dig a hole and chop a root off?

I try to take only the size piece I need. Usually I locate a growing tip and trim the end off that. Just as pruning branches produces more side shoots the same thing happens with the rhizome.
