Good Cover Crop for Zone 8b

Can anyone recommend a good cover crop for zone 8b. I've been searching and all I've gotten is more confused. My current plan calls for planting everything from seed.

You've waited quite awhile for someone in a warmer winter zone to make a suggestion, OG.

How about this one: broad beans?

Fava bean plants grow well and quickly in very cool weather. If you have a population of people from the Middle East, you should be able to find the seed in bulk at a grocery store where they shop.

In warm weather (sweet corn weather) I'm reading that sudan grass, aka sorghum, is a strong growing cover and forage crop. Articles state that it can be grazed or cut a couple times before tilling under. I'm rather found of sorghum syrup, and grain sorghum, but making those things is not in the plans. I am going to try it for green manure this summer. I'm in zone 7b...Atlanta/Georgia Piedmont.

The feed store sells a lot of different clovers this time of year, and mustard/kale/winter greens. I'm using a cover crop of mixed winter greens on a big bed to cut for ourselves and the chickens.

I am also going to try fava beans when I get around to it. Next summer I'll also try buckwheat. A good one here for spring is a short variety of peas, the seed is easily found in bulk.
