Growing old onions???

OK, last year was the first year I really planted onions so I am very new. I had some left over from last year that were small and I had read that you can keep them to plant this year and I did. About a dozen, anyway they are doing great I think... They have really large green tops but I can tell that they are all doubled and tripled. So for each onion I planted it has two or three separate looking tops growing from the plant.

I am assuming this is normal, but do I need to do anything to remedy this or do I just leave they go?

I think they will flower soon, 'Dorie.

You may want to find out if you like them as they are right now.

I've eaten onions that are bolting to seed and there was nothing at all wrong with them. You might think of them as "leeks" and go with a recipe for those.

That would be great because I am buying my onions now and I would love to be able to use them.
