I hope this works:

Replanting the hybrid shallot bulbs results in so many that bolt to seed. Buying and sowing seed directly into garden beds works fine. The harvest is later than using sets in the early spring and the tiny seedlings you start off with need careful weeding.

I'm saving hybrid seed ...

@hoodat said that this should work for me. I finally decided that it was worth a try. By the way, these seed heads sure smell good!

my onions and leeks went to seed this year so i'm going to keep those seeds for planting next year. also let the garlic form bulbils and i noticed on one that was drying out that the tiny flowers are actually forming true seeds! i'm still looking around for shallot seeds but when looking i get sidetracked and forget to add them to the cart.

Catalog outfits, Chickie'sMoma.

There are lots of interesting varieties out there. All of the seed is for hybrid, I believe.

The seed sprouts well for me so the kinda pricey packet isn't outrageous. I guess that's one reason I haven't saved seed. Another reason, since the French Grey I've had for all these years has never, ever bloomed - I wonder if one of the hybrid shallot's parents might be something other than a shallot.

... don't laugh. Shallots are the same species as onions. If I end up with a bunch of onions from this seed-saving, they'd better be good onions!

Steve ;)

It is worth saving the seed and growing it, you can select for ones that suit your needs and growing conditions.
You will end up with your own non hybrid shallot that you can even give a name to.

Edit

Actually I should say shallots as you could end up with multiple lines.
