Have I let my cauliflower go to far?

It doesn't look like any cauliflower I've ever eaten before. The heads grew big like overnight...this has been, I don't know...2 or 3 weeks ago. They've not grown much bigger since then and they've been "fuzzy" looking like this all this time. Is this supposed to go away or have I let them "bloom"? I've never grown cauliflower before and I didn't expect it to develop this way. I'm afraid I missed the bus! They're all like this.

It looks about prime for harvest to me. Actually harvesting a few days earier would have given you tighter heads but it's nowhere near too far to harvest. Not all cauliflower are white. many varieties have that creamy color and some are even green. Most of hose off color types are for home use since buyers of commercial cauliflower expect dead white curds.

They're really big and look otherwise tasty. Is it ok that they are fuzzy? I really didn't expect them to be fuzzy! :p

ETA: I've had the leaves tied up to blanch them for about a week now...

Quite a few of the heirloom varieties have that fuzzy look. I'd harvest before it got too loose. It's still edible after that but it complicates the cooking. They tend to fal apart in cooking if they're too loose.
