Mexican cold shrimp soup I'm in Heaven

The neighbor lady just brought over some Mexican cold soup for me. It has shrimp, chopped tomatos, thin slices of cucumber and avocado, chopped onion and cilantro in it. Just the right amount of spiciness to wake you up without being overwhelming. I think I died and went to Mexican Heaven. :drool

The veggies are all put in raw after the soup cools. The shrimp is brought just to a boil in half water and half tomato juice with some thin slices of jalapeno to give it bite.. As soon as it reaches a boil turn off the fire and set it aside. If you boil it longer the shrimp gets rubbery. You can either let it cool to room temperature or chill it in the refrigerator. Add a dash of red wine vinegar after it cools. The veggies are added in raw just before serving. It's served with a wedge of lime so the diner can squeeze some lime juice in if they wish.
