Mint a bit yellow, why?

Have this mint I bought last year as a wee little plant. This year it's grown to a near 3ft giant. I'm seeing flower stalks start and today I see bottom leaves are turning yellow.
Why are they turning yellow? Is it just aging or from flowering?
My mom wants me to cut and dry the plant to sell to her.
Will the seeds sprout?
Can I cut and dry half the plant or will that stress the rest of it?

Looks normal to me! Ours almost always flowers and probably sets seed. But it spreads by sending out runners. And those can go a LONG way. That is why it has a reputation for being invasive. You could cut the entire plant back to a few inches and it will still come back. Enjoy the mint.

But I have to tell you where my mind went when I read Mint turns yellow..... ummm...... maybe the dog pees on it? :lol:
