New Zealand Spinach returns!

We planted New Zealand spinach (seed from Baker's creek ) and where very surprised to see a plant up already! It came back from the spinach that dropped seed last summer and managed to overwinter. So far only one. But am surprised to see any after the harsh winter we just had.

:cool: ... wouldn't that be cool, a mild Spring and a garden full of volunteer greens!

As Dad's gardening slowed in what we sometimes call advanced age, his patch of New Zealand spinach was a dominant feature. I thought it was a pretty good green.

My chives are ready for an omelet, Lesa ;). I'm up a little later than usual this Saturday but as soon as the meds kick in . . . I should be ready to stir up an omelet! Got the cheddar, mushrooms, salsa sauce :). But, wouldn't a New Zealand spinach frittata be a tasty alternative??
