Got some seeds from the BYC seed exchange and actually got some to grow. I thought they were a winter squash, but I guess not! I think I let one get too big before picking (about 6" across). So what is the best way to cook them? Should I pick the rest when they are smaller?

Yes, pick them small. You can use any recipe that you use for summer squash. I sliced mine thin, added a lot of fresh basil and layered with cheese. Made a good casserole dish. They don't have an awful lot of flavor, so cheese is always my choice to add.... Enjoy!

I would think you could still use the big one- if I have a squash that gets too big, I just scoop out the seeds- the flesh is still fine...

OMG...these things are delicious!!!

I tried it both raw and cooked. LOVE IT!!!

It has such a unique fragrance. Cucumber/apple-ish???

Taste way better than a zucchini raw. Steamed up really quick and was just as tasty hot.

I am growing these next year for sure!!!
