Will letting my peas trellis on my sunflowers hurt the sunflowers? The sunflowers are not even close to being full grown, but are slightly bigger then the peas and the peas keeping grabbing onto the sunflower stems.

Peas grow pretty fast, so they may soon be taller than the sunflower..Might want to stake the sunflower, which would also allow the peas to continue to climb.
Biggest issue I could see, is the peas will finish and die back well before the sunflower does. You'll have all this dead, dry pea vine hanging off of it.

Yeah, but you harvest their seeds that way.

It depends on a few factors, how high will the sunflowers grow? How high are the sunflowers at time of wanting to sow the peas? How high are the peas supposed to grow?
