Ok, my saffron came up so quick I didn't even expect them yet. Actually, I forgot about them. Then I go out today and they're BLOOMING like crazy!!!

Those are beautiful! I have never seen any of those. Is this time of year when they normally bloom? I thought crocus only bloom in early spring...

Saffron crocus bloom in the fall, there are other fall blooming crocus out I do believe. These aren't as pretty as most of them, but I have these specifically to harvest the spice from. YUM!Wisher1000 said:

I'm learning so much! I have heard of Saffron, the spice, but never used it. How do you harvest it? What is it like and how do you use it?

I use it in a lot of fish dishes. The saffron on those red/orange parts that come out around the stigma on the bloom (not the yellow part) and you harvest them with tweezers (I found that easiest). You then let them dry on a paper plate or something, later I store them in a paper envelope for use later. Definitely store them so they stay dry.

I can't find saffron in the stores anymore. Not in the spice section anyways. What stores still carry it? Only place I could locate it is online.

Your crocuses are beautiful! No wonder though that saffron is so expensive. That would be a lot of work to pull all of those little threads from the crocus to put into bottles!
