I picked 3 patty pans, 1 zucchini, and 2 yellow squash this afternoon along with a few green onions. With the addition of a couple of eggs, some flour, salt, and pepper I have summer squash fritters. Yum. We're also having a casserole with potatoes and herbs from the garden.

That looks delicious! Can you give more details on how you make them or do you know of a link to the recipe? This looks like a great way to use all the squash I have coming!

Sure, I'd be happy to! It was spur of the moment and I just whipped it up but I remember how I did it.
I grated 1 zucchini, 1yellow squash, 3 patty pan squash, and 1 large onion with the fine grating plate in my food processor, added salt and pepper, 1/2 cup chopped parsley, and 3 chopped green onions (including the tops), then I added 2 eggs and enough pancake mix to make a batter (I think about 1 cup) and mixed it all up. Then I cooked them on melted butter in a skillet. I kept them warm in the oven while I was finishing the batch and served them with sour cream with a little homemade salsa mixed in.
My husband loved them and my kids ate them without too much complaining. ;)

What a great idea!! My zucchini and yellow squash are coming into full production & this looks delicious! I'll give this a try this week!

You seem to be the kind of cook I am: If something sounds like a good combination, give it a try. My only problem is that if I come up with a winning recipe, I can't remember all the ingredients I put in it.

Oh, I forgot to mention that after I grated the squash I put it in a cheesecloth lined colander and salted it and let it sit for about 20 minutes while I put together a casserole, then I squeezed out as much of the liquid as I could so that the fritters wouldn't be soggy. It's an important step.

Now for TMC, having something like this on her blog makes sense but I've essentially been writing most everything on the forums and then relying on my memory (& search) to find them again, when there's reason to. I'm thinking that an "index" somewhere would make that all easier.

Wowww......I didn't know a "patty pan" what a kind of squash! Great news for me because when I googled I found that it's a scallop squash-something I'm growing this year but had no idea what to do with.

I feel like I just won the lottery!
