Now that I'm collecting strawberries and freezing them because I have a limited amount of space and production which leaves me no choice to collect them until I have enough to make jam, only thing is that I don't have a good recipe, it's my first time canning any kind of jam and need a really good recipe, can anyone help me with one?

All brands of any kind of pectin will have a package insert with recipes, and they always include strawberry jam.

You *can* make strawberry jam without commercial pectin but it will, at best, be a rather runny soft-set affair, and often ends up as syrup or ice cream topping instead. I'd recommend for your first few tries, you use commercial pectin with the recipes that come in the box.

Good luck, have fun,

Pat

I would buy a box of the low-sugar SureJell pectin and see what the insert says. :)

(We made a few jars of strawberry jam this year but only had the regular SureJell and were just NOT willing to put THAT much sugar in it, so it didn't set up well.)

I love strawberry freezer jam because it keeps the fresh strawberry taste. Here's the recipe I used last year, off the box of dry pectin. It's really easy!

Journey, I love that freezer jam recipe too! My nephew had it on pancakes one day- and he said it was so good- I should sell it!! I am going to try canning the strawberries this year- just due to freezer space issues.
