Substituting eggplant for zucchini

Has anyone done this to make bread? I have no zucchini but eggplant running out of my ears. I love zucchini bread hoping I can substitute

The only eggplant I've ever eaten had a pretty strong bitter taste. I don't think you could successfully use it instead of zucchini in a dish that was a dessert or sweet bread. Otherwize, it might work, say with parmesan cheese.

Soak it is salt water if it is bitter. Bitter is very unusual-it should be very sweet.

Hmmm, I guess the little that I have eaten has turned me off to the possibilities. May have to try it again. :)

I consider eggplant a lot like pasta in that it has its own flavor but it is really good at absorbing other flavors. It's more of a base for a recipe than the main course, though I like it cooked by itself with just a little salt and pepepr too.

I have never had a problem with it being bitter. I sometimes don't peel the Japanese eggplant but I always peel the other type. I wonder if not peeling it may have caused the bitter taste? But the way eggplant absorbs flavors and soaks up other things, I also wonder if the bitterness actually cam from something else?

Seedcorn, what do you have to lose by trying it? I think the taste will be OK, but you may have a problem with the consistency. It may be too moist or mushy for you but I'm just guessing. But if you do try it, let us know.

Tried, u were correct as it takes forever to bake. Recipe I abused had the heat too low. Slight eggplant flavor, should have used more cinnamon. Chickens like it as I gave them the part that wasn't cooked hard enough after one hour.

Trying another recipe for savory bread. Same problem. So instead of one hour, it's going on 2. This bread recipe is a complete bust although the chickens r eating it. Too heavy, no rise to it.

I'm same on Japanese vs Black Beauty which needs to be peeled.

I really wish you would come up with something to do with eggplant- that taste delish (nothing like eggplant...) Keep experimenting and reporting!:lol:

Like eggplant parmasian, like it as dip (with sauted onions and peppers) with pita bread but still working on another way to eat it as it is suppose to b good for u.

Eggplants come in different species, like Peppers and Squash do. Most of the other exotic species of eggplant do have a strong flavor. Turkish orange has a flavor so strong made my mouth pucker up.
