I have a ton of Thai peppers. What do you folks do with them ? Any recipes for sauces that can be canned ? I figured I would dry some but I have a lot.
Hi timberlane, here's a recent post about candied jalapenos, maybe you could see how that would work with Thai? If your Thai peppers are anything like mine, they might be TOO HOT for this recipe, at least they might be for me!! I like moderate heat only. I had a ton of Thai Hot Dragon peppers a few years ago, and dried lots. Still have some left, they're still mighty hot!
I claimed I was gonna make a shakeable spice mix last year with too many Thai Hots and Super Chilies. Figured I could drag out DW's dehydrator for its maiden run and dry some peppers, sweet onions and maybe some herbs. Powdered salt looked like it was necessary and there was something called "popcorn salt" at the soopermarkets. After going down the aisles of 3, I gave up at finding the stuff in the stores!
This year, a lot less peppers. However, I know that Michlitch in Spokane (link) has everything I might need, including the salt! I'll put it together one of these first days . . .
A common way for us to keep hot pepper is to beat it to a pulp while it is fresh, using a mortar and pestle. This can then be put in a small container and kept in the freezer. The pepper can just be scraped, a little at a time, from the container. Freezing doesn't cool Thai peppers!
