Here was my last tomato harvest, including a lot of green ones:

To give you an idea on size the back two bags are gallon size, oh and these got put in the freezer for the chickens winter treats.

Cats, I am in trouble!! I've got too many tomatoes ripening too fast!

Our frosts came late this year but . . . they came. I picked a few buckets of green fruit. And, away they went! Even sitting out on the deck in baskets they are ripening too fast.

I've got a recipe for a "macaroni" Casserole with Fresh Tomatoes & Cheddar Cheese but I think that rice would work better with fully ripe tomatoes. Do you think that I could just substitute rice for the pasta? And, what about freezing the casseroles, do you think that would work okay?

The ripe tomatoes (Rainy's Maltese and Sungold cherries) are out of my greenhouse. There are only a very few plants in there. The little green one is a Tigerella. It will soon turn red with yellow stripes and join the legion of ripe tomatoes I'll have to deal with . . .

I've made lazy man's cabbage rolls with tomatoes I chopped up in the food processor and froze them. I often use my crock pot to reheat them once they've been frozen so they don't dry out too much. I add more tomatoes or tomato juice while reheating.

Don't forget, if you do any canning-you can freeze those tomatoes until you have a chance to process them. It works very well. I am thankful to Pat with chickens, for that tip. It has saved me! Gives you a chance to have a bunch ripe at the same time.
Good idea for chicken treats, Cat. I always laugh when I see how exited the girls are for something in winter, that they turn there beaks up to, in summer!

So far they have been happy with the couple that have been given to them and the ones they have stolen threw the fence. :lol:

And my carrots, which got planted to late and in too much heat so I only got:
