I just pulled a bushel of radishes tonight...and I stopped there. I could have kept going! Sparkler, cherry belle, some dark purple ones, daikon. Why on earth did I plant so many radishes, you ask? Well, I'd had some of these seeds for 3 years so I thought I'd better purge my seed hoard. I really didn't expect so many to germinate. I used a handful this evening in roasted veggies for dinner. I also like them salted or with dip. Too bad you can't pickle them... Can you poison yourself by eating too many radishes??? :idunno Everyone I know will be getting radishes for Christmas. :p

ETA: I found myself googling radish nutrition to see if too many actually would make you sick. I found this really cool website that gives you a complete detailed analysis for a given food.

Here's the results for radishes, 1/2 c. slices.

Here's the results for mustard greens (also got those coming out my ears), 1 c. chopped, cooked, w/ salt.

For mustard...524% of the DV of vitamin K, 177% DV of vitamin A and only 21 calories. Surprisingly, beets (root) weren't nearly as healthy as I thought they would be. Leafy green veggies have very high anti-inflammatory factors, and so would be cancer preventers. So eat more leafy green veggies!!

I suppose you really can pickle just about anything. Wouldn't be the weirdest thing I've seen done!

Excuse me . . . that seems to be spinach or something from lunch, stuck in my teeth!

Pickled radish? Those Vietnamese sandwiches? Pickled Carrot & Daikon Radish (link) But, slice them both a little thinner than shown in the picture.

You can pickle mustard greens. I have one word of advice for you, Journey: Don't!

Pickling and fermenting things is not only a great way to store food, but some of it tastes great, and there is a huge variety of flavors and textures.
