Nice haul! Are those Cinderella pumpkins I see? We loved the overgrown patty pans for fall decoration. My daughter calls them "flatty patty squash". I tossed them to the compost pile at the end of fall and by spring they were hollow shells like a gourd would do. We made fairy houses out of them!
They do look like Cinderella's coach, don't they. The are Rumbo squash. Some get to at least 40 lbs. They are prolific, seems like squash bugs don't like them. and they are soooo sweet. I roast them and then freeze the extra. They can be used instead of pumpkin for your favorite recipes. We eat the patty pan.
Boy howdy!! Those are some bodacious squash! I used to take the patty pan, dice it up and saute it with some onions and then make a cassarole with boiled shrimp, saltine crackers and cheese. It was so good! Just send that wagon on down to Texas!!
DW & I had a couple of kabocha squash for dinner tonight.
It is so easy to cook them in the microwave and baked is the way we prefer them . . . short of getting them into a pie .
So easy and we are going thru them quickly! I suppose that we will be bored enuf with the kabocha & buttercup that there will be some for holiday pies :/. No less than usual and we always have the pies. Getting any squash thru January, isn't likely. Maybe we should devote a little more space to 'em . . .
