You know I go for "simple" - right?

This may be a new idea for you! Keep an open mind, I was advised!

An open faced sandwich, but I forgot that and just made a regular sandwich with 2 slices of good, toasted bread.

Spread a good layer of peanut butter on bread (I think creamy is best here)

Next, a couple slices of your favorite tomato

Sprinkle with seasalt and lots of fresh ground pepper!

It was described as absolutely delicious and - I agree! The taste reminded me of a favorite salad: fresh tomato with avocado, sprinkled with sunflower seeds and croutons. Served with Italian dressing.

I had my sandwich with a beer and a cream cheese croissant and coffee for dessert :).

Hey, that is almost my favorite sandwich... Now, keep an open mind- on top of the tomato a slather of mayo! Peanut butter, tomato and mayo- just yummy!

Love tomato sandwiches w/bread & mayo. Love PBJ sandwiches, so I'll have to try the marriage of the two.

Ummm... I like my peanut butter sandwiches with bananas and my tomato sandwiches with mayo. Yep... I'm stuck in my ways!
