Quarter or half (depending on size) and lay them on an oiled cookie sheet skin side up. Drizzle with olive oil, sprinkle with fresh chopped rosemary and coarse sea salt or kosher salt. Finely chopped garlic is optional.
Preheat the broiler or BBQ grill and broil till the skin is crispy and a fork goes into them easily.

Yum!! Sometimes i make them in a pretty similar fashion...get your oven hot, put a huge glob of butter and the garlic in a baking dish...i use a glass cake size...then put just that in the oven to brown while you chop up potatoes. Once the garlic looks good, take the hot pan out and toss in your potatoes, stir them around a bit and they'll brown on the hot pan. Back in the oven for a bit, then enjoy!

Teresa took some of the potatoes I turned up the other day when I was weeding the box and she made salted potatoes. I think she put them in a big pot she has and added a cup of course sea salt and covered them with water. Then she let them sit for 24 hours before taking them out and letting them dry on a towel. When they were thoroughly dry they were kind of crusty with the brine salt. Then she put them in a shallow pan and drizzled them with olive oil and added garlic and rosemary and mixed them gently and poured them out on a pizza pan and cooked them in a hot oven for about 30 minutes. If my Irish ancestors had know how to make these they'd never have left Ireland. What a wonderful treat for dinner.

But keep in mind to be careful if you're on a sodium restricted diet.

Here is a recipe I found online from The pioneer Woman. They are called crash hot potatoes. I don't bake mine, but rather fry them gently in a cast iron skillet. They are sooo good.

After reading this post- I couldn't wait another minute... I dug some fingerlings last night and had them for dinner! Just boiled with butter and fresh basil. So delicious! Doesn't look like all the rain hurt them a bit!

We had our first batch the other night too. I'm so tired of store potatoes. I pulled up a Carola plant and turned all those little spuds into oven fries to go with our burgers. So Good!

The potatoes really need a few more weeks to grow though.

I do roasted potatoes like all of you , only different. They're a staple around here.

Monty, I remembered that I have made smashed potatoes after I read your link. I don't know why I haven't done them more often.
My mind is a sieve as they say... That is a funny lady, really enjoyed reading her blog. Bookmarked it. :)

ooooh... I do it similarly!

I cut into home fries or little medalions put in a big boil. Toss with olive oil, garlic, salt and finally chopped rosemary. Toss everything together. Preheat oven for 425 degrees. Put a cast iron skillet on the stove over medium high heat. Poor the potatoes into the skillets, flip after a couple minutes and then into the oven for 15-20 minutes. They are AMAZING! Just did it last night and served up with some garlic green beans and roasted up one of our meat birds. PERFECT!
