White eggplant, not a clue

We had room on the raised deck for one more plant container, so I went to Agway to purchase an eggplant. The very last plant they had was labeled white, so I thought: I don't care what color the skin is.
I expected a normal looking eggplant, but these are more like a carrot. By the time they are peeled there will be nothing left to eat. We have no clue as to how to prepare these, or, even if it is even worth trying.

Those look good Jackb. Asian restaurants never peel them and neither do I.

How do you prepare them? Can give me a for instance? Theresa said she thought they were used in a stir fry or something.

thou they are thin marinate and grill them, a good pot of Ragu and garlic bread or make a crisp..
Yes would also other dishes
