I used Alton Brown's refrigerator beet recipe...hope they turn out okay.

The pickles I really liked were made from the Dill recipe in the book "Small Batch Preserving" - since I'm at work right now I don't have access to the recipe at the moment.
I'm just guessing that probably the most sour of recipes are the many-day-pickle recipes, which I haven't tried yet.

Robb - I love figs too! I was in Philly in November and had a white pizza with lovely cheeses and fig jam dabbed on top and it was the BEST! Gonna try to recreate that!
I found this recipe in the latest Vegetarian Times magazine (though I'm not a vegetarian, I only eat meat a few times a week)
2 lbs fresh figs, trimmed and quartered
1.5 cup sugar
12 oz dried figs, trimmed and sliced
3 tbs. lemon juice
1 tbs. grated lemon zest

I'm a big fan of Jamie Oliver, and he had a spicey chutney (though I'm sure you could use any kind) that he put over a huge slab of bread, then covered the chutney with cheese and baked it. Sounds yummmmmy! I wanna make some chutney just to try this sweet and simple recipe.
