I have the Presto 23 quart pressure canner/cooker and it also says on the box "perfect for smooth top ranges" or something like that. It's the one here:

I'm getting a lot of veggies a little at a time. I end up putting them all in the freezer (blanch, bag & drop in the deep freeze) because I don't have more than a few pints at a time.
I find I'm getting a freezer full of stuff over time. So, now that I have three gallons of beans, could I take...
The University of Georga offers a free online study course called-
Preserving Food at Home: A Self Study
I signed up for it. It took them several days (like they said it would) for them to set up an account for me. But they did get one set up and I started the class today.
It's REALLY COOL...
Ok, I reallyreallyreally want an asparagus bed. Per the directions in a book about planting vegetables in Mississippi, I should start them in January.
I had already selected a small space of land along a sunny fence line and started working on it to get it ready to plant there.
But I have had...
Well, the verdict is in. I did make another batch, being very careful to measure the correct amount of sugar. I was right. I added too much sugar the first time.
The second batch didn't boil over the pot. It also didn't taste as sweet and had more of a blackberry flavor. The first batch is ALL...
Can you believe that? My husband gags, retches, and gasps for air each time he sees the jar! I am the only one in the house who eats them. Black olives are good to me as a... like a topping--on pizza, subs, or Mexican food. But they don't do much for me by themselves.

I know. I typed that ALL WRONG. It sould say "not into annuals." I noticed it when I was rereading the post yesterday. :p LOL
I did end up growing some dill and have mostly decimated it for use in kosher dill pickles. I also planted some basil. Pinched it all off, and it's bushed out again, but...
I canned six pints of diced tomatoes last night (using the instructions for halved tomatoes because there were not different instructions for diced.)
I have a couple of questions about how it turned out.
1.) It REALLY smelled like tomatoes in the house after we turned it off and let it vent...
This is what kind I got. A Presto 23 quart pressure canner & cooker:

It's so SHINY :D
It was really funny, too cause it was really well packaged, I must say. And i got out the first piece of paper that says DO NOT OPERATE WITHOUT...

I'm so excited! I have it at work with me. The UPS driver just delivered it today. I have been trying to think what I can preserve in it today because I can't WAIT to get home and try it!!!!!!!!!!
Anyone have a recipe for preserved leaves and twigs? LOL
Cassandra
This may not be an option for you, but could you freeze it? I have read that, for freshest taste, freezing is best.
I have been freezing tomatoes this year. I haven't yet got enough at one time to drag out the canning supplies for it. I did "hot water bath" one jar of salsa while I was doing...
Really, Pat?
All the recipes I have call specifically for either white vinegar or apple cider vinegar... I don't think I've ever seen especially pickling vinegar.
Crap. Am I going to have to throw out all those jars?
There's that botulism poking its ugly head up again. (I ordered a pressure...
I checked again this morning and they were there again last night. Found a couple of mostly green tomatoes, half eaten, laying in the bottom of the bed. My vinegar rags had lost all their scent.
We had the gates closed up tight. I know deer will jump a 4 ft. fence, so that doesn't completely...
I've always wondered that about Peter Piper, too!!
And yvw. I had to look it up after I got the recipe and I wrote on the back of the recipe card "peck = 8 quarts"
LOL
