My bosses wife, Nancy, sent me some canning jars and a recipe this morning. It is a cherished recipe to her because it was one her late mother used. I have seen reference to the recipe on the internet before, so I don't think it is necessarily obscure. But I wanted to share it anyway, because Ms. Nancy wrote it to me the same way she had it written down a long long time ago. I think it's really sweet. I'm going to try it this weekend.

Crystal Pickles (by Mrs. Elsie Rogers)

Soak over night:
1 peck cucumbers cut up in
2 gallons of water & 2 cups of lime.

Next morning wash 4 times, soak in clear water 4 hours.
Mix 5 lbs sugar
3 quarts vinegar,
1 10-cent box pickling spice.
Soak in syrup 3 hours, cook 1 hour,
& can while hot.

I will let you know! Though I may have to go back in time to get a ten cent box of pickling spice. The last I bought was around three dollars!

(Still haven't done them yet.)

You know, what is the deal with pickling salt? I bought a box of it the other day and read the ingredients and it said "Salt"

Pickling salt doesn't have added iodine and such.

In peppers, I think a peck is 144. I'm guessing it's the same for cukes?

The definition is 8 quarts (in an online dictionary anyway)

Dictionary: United States dry measure equal to 8 quarts or 537.605 cubic inches.

Then maybe they were cherry peppers that Peter Piper was picking to equal a peck of pickled peppers? :D

Also, I've always thought him extremely talented, being able to pick already pickled peppers. Maybe he waters them with vinegar water.....? What a guy! ;)

I've always wondered that about Peter Piper, too!!

And yvw. I had to look it up after I got the recipe and I wrote on the back of the recipe card "peck = 8 quarts"
