Being of Italian background my mother made eggplant a lot. My family loved it, I was never a fan of it. last week was having dinner with a friend, she ordered the eggplant. She made me try it, was surprised how good it was. I think it all depends how you make it.

Very nice pickings Major! Do the white eggplant have a different flavor than the purple? They sure are pretty things.
They have a sweeter taste to them corpared to the purple

Speaking of purple eggplant was driving down hwy 701 to the motel of course this is cotton, soy bean, field corn, cucumbers growing area one farmer had a couple arces of nothing but purple egg plant using the Florida weave method... That was a new one for me might try that next season

.

At one time, I thought only purple eggplant would become bitter. I learned that stress on the plant results in bitterness. Stress and bitterness may simply be from age :old.

Eggplant is a great sponge. It absorbs the flavors of whatever it is cooked with. Good flavors, good eggplant ... Now I'm just talking through my culinary hat :hide.

Steve
who has pretty good looking eggplants this year, considering history

Eggplant has really grown on me over the past couple of years. Those white ones are beauties! I will have to branch out and try them.
