@pauldaoust greasy beans are normally eaten not just at an early snap stage of growth but also later when the pods have become full of seeds. many people who are not familiar with them may not do this, but it was common feature as it increased the amount of nutrition in the beans. also they would be strung up and dried at this stage of green pod fill so they could be used later on (called leather britches). i've never done that myself.
