A Good Sharpening Steel?

My sharpening steel is done in. It is this diamond coated type and it had holes, so it was not the smoothest to begin with and has been retired to the garage. Now I am hunting another. 12 inches, fine, thick coating of diamonds? I am afraid of the 25 dollar ones from china. Should I get a ceramic instead? I can see it breaking.

You mean to sharpen knives like kitchen knives ~ A hone, maybe you'd call them a steel ~ is good ~ not the kind that is like a file ~ but a smooth steel with a handle ~ will sharpen a knife so sharp ~ will have people yelling at you: Why didn't you tell me you sharpened these %@@$%$$ I just cut myself ~ with a diamond or a steel with file ridges ~ they thin the blade ~ yes it does make them cut better ~ but with a hone ~ you know a smooth steel rod the blade is actually case hardened ~ the steel of the blade is pressed into itself ~ the metal from the cutting edge up is denser than the interior metal and the edge last longer ~ I can get blades so sharp ~ you know, I'll bet there are videos on youtube that instruct: how to sharpen with a steel ~ let me check ```

F. dick has polished rod steels as you describe. They are german and professional butchery tools that cost roughly 100.00usd

Well, there are several ~ they all seem to be a pain in the, talk too much ~ well ~ some do mention that a hone straighten the edge ~ a butcher could show you ~ or maybe a member of the family ~ don't right a hone will open new horizons of enjoyment when using a well sharpened blade ~ If I find a good video ~ I'll post it ```

I'm sure we never spent such a price for a steel ~ I have my fathers and one or two I've picked up along the way ~ I think a good one can be picked up for maybe ten or fifteen ~ they are ~ the ones I have ~ just carbon steel rods ~ I've gotten one or two with knife sets that are like files ~ I don't like that kind ~ I've seen them for under ten dollars ~ be nice to find one in a second had store ~ a good kitchen supply ```

I see on on Amazon for under ten ~ has an orange plastic handle ~ that would annoy me ~ kitchen supply ~ should have one ~ be nice to find and old good one ~ Wooden Handle ~ I have a couple stuck in the wooden block knife holder ~ I go from one to the other ~ nether is better ~ if you're in no rush try second hand store ~ some have a bunch of knives and this and that from kitchen ~ you might be in the right place at the right time and find one waiting for you ```

Therefore, the key difference between sharpening and honing steel is whether or not the material is extracted. Honing steels are made of steel that has no sharpening feature. Sharpening steels are ceramic or have a diamond coating and are often stronger than steel.

I have since aquired 2 hones and neither smooth. The blade angles in the kitchen knives has been changed to the 15 degree from 20. This helped a lot.
