There is a variety of Crab Apple called BRANDYWINE that is I sure believe, the single most bitter commonly available apple variety in the world!
Oh boy are they bitter!!!!! But, they produce fully double flowers, and can grow with a persistent upright leader in the middle for landscaping purposes.
I heard tell that a slice added to a batch of apples being crushed for cider improved the cider. Also, supposedly Brandywine crabapples are extremely high in pectin. The trees have reddish stems. Their crabapples are the size of Whitneys, but a very powdered red color. Pretty sure it is an old heirloom, but that breeders have propagated selected seedlings of them.
