i just went through and harvested my garlic and i let the scapes grow till they produced bulbils. but i was hoping there are some recipes or ideas for using the stems/scapes since they have all straightened out and no longer curly.

could i chop these up and can them in oil or vinegar as if they were minced garlic? would i be able to process them into a garlic jelly? i did just find a garlic scape pesto but i'm still looking for other ideas.

the pesto is the only recipe I've ever seen.

How about sauteing them in olive oil and using them as a topping for steak or fish?

these are a little stiff since they are not the young curly scapes they were weeks ago. i thought i could use them as skewers but they aren't that stiff! i may take and process them and make some pesto anyways. i did find a recipe for using them in mashed potatoes which i should be pulling those soon. i may also use them in a batch of pickles instead of using cloves.

I really wanted to like the pesto (made with the early scapes). Unfortunately, I didn't...I cut them up and add them to whatever I happen to be cooking for a few days, then throw the rest in the compost.

I found some scapes when we harvested our garlic a couple of weeks ago. I diced a couple of them (and the bulbils), and sauteed them in olive oil with some summer squash and onion. It was delicious!
