Maybe it's the type of soil they are grown in, both hubby and think although most of the time they have a slight earthy taste the flavor also tastes a little like corn on the cob. We both love beets, the vegetable we both don't like is eggplant.

never liked eggplant <whos knows what mom did to it....barf> couple years ago planted a purple variety..not happy did some research found "clara" a white variety it does not have that bitter taste to it...if you let them get to big they start getting bitter....

Ya know, chard is a pretty good green. If it only took me 50 years to learn that, it's embarrassing ... especially thinking that baby beets might be my favorite vegetable :hu. We live and learn ... or, we miss the boat.

chard was new to me as a vegetable about 20yrs ago and i had it
in a pastry of all things (with chunks of smoked ham and some
cheese very good eats).

since then i took to buying it once in a while for greens instead of
spinach because the larger leaves stood up to being used as a
wrap. unfortunately, Mom doesn't like it at all and so while i have
grown it for color and once in a while eating by me, since i cook so
rarely these days it isn't a main feature in any of the gardens.

i tried the multicolored ones too just to see what they looked like
and tasted like. the red i still liked the best.

yeah, i can agree those are hints in most beets i've had.

i love eggplant. i could eat babaganoush (spelling should be suspect when i type foreign languages :) ) quite often if i had fire to roast them over.

@ninnymary everything tastes better when using the good stuff but the maple flavored balsamic is also yummy on B. sprouts, don't forget a bit of butter:drool.

Do you have a store similar to this one near you https://www.olivethisandmore.ca/ if so you should go in and do some taste tests. I'm not too fond of the flavored olive oils but some of the flavored balsamics are really good https://www.olivethisandmore.ca/dark-balsamics

Looks like there are only 3 stores and they are all in BC.

@ninnymary , these specialty stores are all over the place we have at least 3 here, just go by different names @Nyboy found one close to him :). Try googling Olive oil and balsamic vinegar stores in your neck of the woods, I'm sure you'll find one close to you.

There are several olive stores in the bay area. There is one in SF that is called Olives This and That. Not sure if it's like yours.

@ninnymary sounds like you found one of them, the nice thing about these stores is you can actually taste before you buy.

Should've added you can buy small, medium or large bottles, you're no stuck buying a certain size. I often buy 6 small paired oil and vinegar as gifts.
