Can I use dry dill, if I run out of fresh?

Im trying to keep up with my cucumbers, but I have more cucs than fresh dill.

I want to can all the cucs and let none go to waist.

Can I use dry dill to can pickles?

What is the ratio fresh to dry?

Do I buy the dry dill seeds or the stuff that looks like bits of fern?

Can I use the same recipes?

Do you have any recipes for pickles that use dry dill?

This doesn't exactly answer your question (personally I loathe dill pickles so have never had much interest in how they're made :P) but if you are trying to absorb a glut of cukes you could always make *other* pickled-cucumber things, like bread-and-butter pickles or icicle pickles or one of the relishes that has lots of cucumbers in.

Or just buy some fresh dill at the market, or bum some from a neighbor ;)

I just got done canning a bunch of Bread and butter pickles. :) My kids LOVE them in winter.

I went to the store in town and they said they didnt carry fresh. So I went to the store in the next town and they said they dont order it any more because people dont use it.

If, I can use dry- from the store dill then I'll try Hamburger dills from the "Ball Blue Book" they sound good in a sandwich!

If not I'm off to figure out what to do with all these beans.

You can use dry dill, either the weed or the seed. You may end up with a cloudy, but still edible, product. In one recipe I have for fresh pack/quick process dills (from the U of WI Extension) it says that you can sub 1 Tbsp dry dill (weed or seed) for each 1- 11/2 head of dill in each pint jar.

After waiting for DS to come home from work and bring me the fresh dill (he works freight crew at the biggest grocery store in town), he forgot to get it. So, I made dill chips with some dried dill weed that I had in the pantry. I used 1 Tbsp per pint jar, and the pickles came out tasting really well, and the brine has stayed clear. However, my 2-year-old grandson, who incidentally LOVES pickles, won't touch them. He says they have "grass" all over them. :lau
 
You can put seeds and other spices in a bag for hot pack. Then you just take the bag out. Pantyhose, flour sack towels, pillowcase, cheesecloth, etc.
 
Untill this year crazychickens we have used the sotre bot dill, the kind you refer to as "lookin like ferns" and our dill pickles have allways been scrrrrrrrrumptious :D
We're tryin to grow our own fresh dill for picklin but our chickens keep findin a way into the garden and eatin it. :barnie
MMMmmmmmmm...wunder if we let 'em eat enough will they lay pickled eggs :gig
