I love using flowers from my garden as a garnish to many food plates.

In a book I got from the library recently. I learned that if you add some paste type food color to superfine sugar it works really great to help edible flowers have really great color! Much better than just using sugar.

I bought Wilton's paste food color at Joann's and it works great!! Here are some Pansies I "candied" the other day.

It is easy to do, you use a small paint brush to apply egg white to the petals. Then sprinkle the moistened petals with the sugar. You have to let them dry a couple of days. I store them in canning jars. Then in the heat of summer here, I can still have my cool weather flowers as decorations.
 
That looks really nice.I have a kids craft book that does a similar recipe with flowers,mints,and sugar.
 
They are gorgeous! I never realized they would keep... So you add the coloring to the sugar?

Thanks for sharing how to make them. I've always wanted to give it a try, never knew it was so easy. I don't have any pansies, but the violets are currently blooming. You can eat their blooms too!

Now I feel compelled to bake a cake...... :D
