it is very easy, you need a meat grinder or perhaps you could do it in a food processor or use a grater, but i'd sure not want to go that ways with it...
per ring of bologna we use about one dill pickle and a quarter or half of raw onion. it really is to taste so some people would add more or use less. we like onion...
when you grind the pickles make sure you have a towel to catch the juice. well, for our grinder, we have a very ancient one which we hand crank.
if you are going to use it right away you can mix the mayo in (miracle whip or helmans or homemade). sometimes we also grind up cheese in it for when we want to put some in the oven under the broiler on a good bread to brown the top.
