Well, they are about 35 feet outside the kitchen door.

I told DW that we would have to begin eating carrots every day or we won't get thru them. It's okay with me (might improve my eyesight ;))!

These are now covered with more carrots, about 8" of soil and under a pile of pine needles.

Another of my "string of fish at the dock" cellphone photo's:

Carrot muffins are next on the menu!

I will be very interested to see how this storage method works for you... Are you worried about critters? I tried about a 100 recipes for carrots last year... My harvest looked a lot like yours. Most of them tasted like "carrot recipes", but the carrot souffle is absolutely wonderful. I'll be digging the recipe out for the holidays- if you are interested,,,

Digits,
That is one excellent harvest of carrots you got there! Looks amazing :thumbsup
But why not just leave them in the ground for harvesting into the winter instead of harvesting them at once?

Good Luck with keeping them in storage, you'll have carrots for winter and then some.

I have done this for a few years. I have used the "sand in the basement" route a long time ago. Not too interested in carrying sand , sufficient to cover very many carrots, up and down basement stairs.

I like to wait until it is plenty cold before digging the hole and piling on leaves. Hopefully, the mice aren't still looking for a nice warm place to call a winter home. That was a problem only once :( and I'll be out there a few times before the snow covers things to check under those pine needles.

Carrots have long been a favorite, Janet. I will have to buy more potatoes at some point but the two of them and a few other things, will be staples all the cold months, ahead. Maybe they are good for me :)!

Gt18, my garden with the carrots was miles away. They are all right close and handy now.

Carrot souffle, Lesa? That sounds great! I'll have 'em around all winter . . .

You were typing while I was editing, V!

That recipe looks like a winner!

I have the ginger and everything, just need to get down to the store for some nuts. (I can't rely on Madam Squirrel to bring me walnuts from the 2 trees down the road ;). She seems to have other purposes for them . . .)

Great crop Steve!:)

I am a fanatic when it comes to carrot juice, so most of mine end up being used for that. I just freeze the juice, no need to worry about storing carrots.
I do keep several pounds for eating as well, but I just store them in a the garage, which is plenty cold. They tend tog et eaten pretty fast so they don't dry up.

I am thinking that freezing

should work fairly well, too!
